Spaghetti with walnut pesto sauce


I just made some spaghetti with walnut pesto sauce (from scratch). It’s delicious and really easy to make. If you’re looking for a creamy pasta sauce without any cream (ok there’s some parmesan in there) then this is the way to go. You’ll need a food processor.


Ingredients:

  • 1 lbs spaghetti pasta
  • 3/4 cup parmesan cheese
  • 2/3 cup olive oil
  • 3/4 cup walnuts
  • 3 cloves of garlic
  • some cilantro
  • some flat leaf parsley
  • salt and black pepper

Directions:
Start boiling the water and cooking the pasta. Take about this much of cilantro and flat leaf parsley (see image below – flat leaf parsley on the left, cilantro on the right). You can probably just use cilantro or parsley exclusively but I like to mix them together.

Add the parmesan, olive oil, walnuts, garlic, cilantro, parsley and salt and pepper in to a food processor. Push the button. Start making the awesome walnut pesto sauce.

Pasta should be almost ready now. Before draining save a cup of that cooking water aside. Add to the pesto mix if it’s not creamy enough.

Maybe blend some more and it should look like this.

Mix your walnut pesto sauce with the spaghetti. Not mixing that well? Maybe add a little of the cooking water here too. Now serve before that parmesan starts cooling down.
